  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 2 tbsp water (for cornstarch slurry)

Vegetables

  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • Optional: snap peas or other fresh vegetables as desired

Garnishes

  • 1 tbsp toasted sesame seeds
  • 2 green onions, thinly sliced

Instructions

  1. Prepare the Teriyaki Sauce: Whisk together soy sauce, honey or brown sugar, minced garlic, minced ginger, rice vinegar, and sesame oil in a small bowl. Set aside.
  2. Cook the Chicken: Heat a skillet over medium-high heat and sear the chicken pieces for about 6-8 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside to rest.
  3. Thicken the Sauce: Return the skillet to medium heat and pour in the prepared teriyaki sauce. Mix cornstarch with water to make a slurry, then slowly stir it into the sauce. Cook until the sauce thickens to a glossy glaze.
  4. Combine and Glaze: Add the cooked chicken back to the skillet and toss it in the thickened teriyaki glaze until fully coated and sticky, locking in the flavors and shine.
  5. Assemble the Bowl: Place a bed of fluffy cooked rice into bowls, arrange the teriyaki chicken on top, and pile with steamed or sautéed vegetables of your choice. Garnish with toasted sesame seeds and sliced green onions before serving.
