Home style Chicken Soup

Home style Chicken Soup is a classic, nourishing comfort food that combines tender chicken, fresh vegetables, and aromatic herbs in a warm, wholesome broth. This immune-boosting, soothing recipe is perfect for recovery or anytime you crave a hearty, wholesome meal with simple ingredients.

Ingredients

Scale

Chicken and Broth

  • 23 pounds bone-in, skin-on chicken pieces
  • 8 cups chicken broth (homemade or quality store-bought)

Vegetables

  • 3 medium carrots, chopped into bite-sized pieces
  • 3 celery stalks, chopped
  • 1 large onion, chopped
  • 34 garlic cloves, minced

Herbs and Seasonings

  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 bay leaves
  • Salt, to taste
  • Ground black pepper, to taste

Optional

  • 1 cup egg noodles or rice
  • 1 tablespoon olive oil or butter (for sautéing)

Instructions

  1. Prepare the Ingredients: Chop carrots, celery, and onions into bite-sized pieces and mince garlic to release its robust flavor. Rinse chicken pieces under cold water and pat dry.
  2. Sauté Aromatics: In a large pot, lightly sauté onions, garlic, celery, and carrots in a bit of oil or butter until fragrant and beginning to soften, building a flavorful base for the soup.
  3. Add Chicken and Broth: Place the chicken pieces in the pot and pour in the chicken broth. Bring to a boil, then reduce heat to a simmer, skimming any foam or impurities from the surface for a clean broth.
  4. Simmer Until Tender: Cover and cook gently for about 45 minutes to an hour, allowing the chicken to become tender and the flavors to meld beautifully.
  5. Remove Chicken and Add Noodles: Take out the chicken pieces, shred the meat from bones, and return shredded chicken to the pot. Add noodles or rice and cook until tender, usually 8-10 minutes.
  6. Season and Finish: Stir in fresh herbs like parsley and thyme, adjust salt and pepper to taste, and simmer for a few more minutes before serving.

Notes

  • Use bone-in chicken for a richer broth and added collagen.
  • Slow simmering deepens flavor and extracts nutrients.
  • Skim foam frequently for a clear, clean-tasting broth.
  • Add fresh herbs near the end to keep flavors bright.
  • Adjust soup thickness by adding more noodles or mashing some of the soup.
  • Use leftover cooked chicken to save time.
  • Season gradually with salt to avoid over-salting.
