Instructions

  1. Prepare the Filling: In a bowl, combine ricotta cheese with chopped basil, parsley, thyme, minced garlic, grated Parmesan, lemon zest, salt, and pepper. Mix until creamy and well blended.
  2. Prepare the Chicken: Place chicken breasts between two sheets of plastic wrap and gently pound with a meat mallet or rolling pin until about ¼ inch thick for even cooking and easy rolling.
  3. Assemble the Rolls: Spread the herbed ricotta filling evenly over each flattened chicken breast, leaving a small border at the edges. Roll each breast tightly from one side to the other, and secure with toothpicks if needed to hold the shape.
  4. Cook the Rolls: Heat olive oil in a skillet over medium-high heat. Place the rolled chicken seam-side down and cook until golden brown on all sides, about 3–4 minutes per side. Then reduce heat to medium-low, cover, and cook for an additional 6–8 minutes until chicken is cooked through.
  5. Rest and Serve: Remove the chicken rolls from the skillet and let rest for a few minutes to allow juices to redistribute, ensuring moist and tender slices when serving.
