Ingredients

Scale

Chicken and Seasoning

  • Boneless chicken breasts or thighs (about 1 lb)
  • 23 tablespoons Cajun seasoning
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Sauce

  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste

Pasta

  • 8 ounces fettuccine or your favorite pasta

Garnish (optional)

  • Fresh parsley, chopped
  • Extra Parmesan cheese
  • Dash of smoked paprika

Instructions

  1. Prepare the Chicken: Pat the chicken dry and generously coat both sides with Cajun seasoning. Heat olive oil in a skillet over medium-high heat. Cook the chicken until golden and fully cooked, about 5-7 minutes per side depending on thickness. Set aside and let the chicken rest before slicing.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain, reserving some pasta water to adjust sauce consistency if needed.
  3. Make the Alfredo Sauce: In the same skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant but not browned, about 1 minute. Pour in heavy cream and bring to a gentle simmer. Gradually whisk in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  4. Combine and Finish: Slice the cooked Cajun chicken into strips and return to the skillet with Alfredo sauce. Toss gently to coat the chicken evenly. Add the cooked pasta and mix until well combined. Add reserved pasta water a tablespoon at a time to reach desired sauce consistency if needed.
  5. Garnish and Serve: Sprinkle freshly chopped parsley, extra Parmesan, or a dash of smoked paprika over the dish for color and flavor. Serve hot and enjoy the creamy, spicy flavors.

Notes

  • Start with less Cajun seasoning and adjust to your preferred spice level to avoid overpowering the dish.
  • Use a meat thermometer or check for clear juices to avoid overcooking the chicken and keep it juicy.
  • Freshly grated Parmesan creates a smoother, richer sauce compared to pre-grated cheese.
  • Reserve some pasta water to thin the sauce and help it cling to the noodles.
  • Use heavy cream for the best texture; substitutions may cause sauce separation.
