Ingredients

Scale

Main Ingredients

  • 500g boneless chicken breast or thighs, cut into bite-sized pieces
  • 200g fresh button or cremini mushrooms, cleaned and sliced
  • 1 tablespoon freshly cracked black pepper
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, finely minced
  • 1 medium onion, thinly sliced
  • 2 tablespoons olive oil or sesame oil

Optional Ingredients

  • 1 teaspoon cornstarch or flour (for thickening sauce)
  • 2 green onions, chopped (for garnish)
  • Chili flakes or Sriracha (optional, for extra spice)
  • Sesame seeds (optional garnish)

Instructions

  1. Prep Your Ingredients: Slice the chicken into bite-sized pieces. Clean and slice the mushrooms evenly. Mince the garlic and thinly slice the onions to prepare all ingredients for cooking.
  2. Sauté the Aromatics: Heat the olive or sesame oil in a pan over medium-high heat. Add the sliced onions and minced garlic, cooking until fragrant and translucent, forming the flavorful base of the dish.
  3. Cook the Chicken: Add the chicken pieces to the pan and sear on all sides until golden brown and nearly cooked through, locking in their juiciness.
  4. Add Mushrooms and Seasonings: Stir in the sliced mushrooms, freshly cracked black pepper, and soy sauce. Cook until the mushrooms soften and release their moisture, blending flavors with the chicken.
  5. Thicken the Sauce (Optional): If desired, mix a teaspoon of cornstarch with a small splash of water and stir into the pan. Cook until the sauce becomes glossy and coats the ingredients well.
  6. Finish and Garnish: Remove the pan from heat. Sprinkle chopped green onions over the top along with optional sesame seeds or thinly sliced red chili peppers for color and flavor. Serve immediately.

Notes

  • Use freshly cracked black pepper for the best pungency and aromatic heat.
  • Do not overcrowd the pan to avoid steaming; cook chicken in batches if needed for a better sear.
  • Allow mushrooms to brown slightly to enhance their flavor rather than just soften.
  • Adjust the amount of black pepper to suit your preferred spice level.
  • Let the dish rest for 5 minutes off heat before serving to allow flavors to meld.
