Ingredients

Scale

Wet Ingredients

  • 34 ripe bananas, mashed
  • 1/3 cup melted butter or oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 to 1/2 cup milk or buttermilk

Dry Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar

Add-ins

  • 3/4 cup semi-sweet chocolate chips (plus extra for topping)

Instructions

  1. Prepare Your Oven and Muffin Pan: Preheat your oven to 350°F (175°C) and line a muffin pan with paper liners or grease it lightly to prevent sticking.
  2. Mash Bananas and Mix Wet Ingredients: In a large bowl, mash 3-4 ripe bananas until smooth and creamy. Add melted butter or oil, granulated sugar, egg, vanilla extract, and milk or buttermilk. Stir until all wet ingredients are well combined and uniform.
  3. Combine Dry Ingredients Separately: In another bowl, whisk together all-purpose flour, baking powder, baking soda, and salt to ensure even distribution.
  4. Fold Dry Ingredients Into Wet Mixture: Gradually add the dry ingredients to the wet banana mixture, folding gently until just combined. Avoid overmixing to keep the muffins light and fluffy.
  5. Add Chocolate Chips: Gently fold in the chocolate chips, reserving a few to sprinkle on top before baking for an attractive finish.
  6. Fill Muffin Cups and Bake: Divide the batter evenly among muffin cups, filling each about two-thirds full. Bake in the preheated oven for 18-22 minutes until a toothpick inserted comes out clean and the tops are golden brown.
  7. Cool Before Enjoying: Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely to set and ease handling.

Notes

  • Use very ripe bananas for maximum sweetness and flavor.
  • Mix just until combined to avoid dense muffins.
  • Use room temperature ingredients for better texture.
  • Fill muffin cups about two-thirds full to prevent overflow.
  • Use a toothpick to test doneness to avoid underbaked centers.
