  • 250g fresh mascarpone cheese (or thick coconut cream for dairy-free)
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons strong brewed espresso or coffee

Garnish

  • Cocoa powder for dusting
  • Optional: chocolate shavings, coffee beans, powdered sugar

Instructions

  1. Prepare the brownie base: Melt dark chocolate and butter together until smooth and glossy. In a separate bowl, whisk eggs and sugar until light and fluffy. Fold the melted chocolate mixture and flour gently into the egg mixture. Pour the batter into a lined baking pan and bake at 175°C (350°F) for 20-25 minutes until just set but still fudgy in the center.
  2. Mix the mascarpone filling: While brownies cool, combine mascarpone cheese, sugar, vanilla extract, and a splash of brewed espresso. Whisk until smooth and creamy.
  3. Assemble the layers: Once the brownie base is completely cooled, optionally brush lightly with espresso for extra coffee flavor. Then gently spread the mascarpone mixture evenly over the top.
  4. Chill and garnish: Refrigerate the assembled brownies for at least two hours to allow flavors to meld and the cream to set. Before serving, dust generously with cocoa powder.
