  • 1 tube crescent roll dough (about 8 oz)
  • 12 tablespoons olive oil or butter
  • 12 cloves garlic, minced (optional)
  • 1 teaspoon fresh or dried rosemary, thyme, or sage (or a mix)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1/4 cup crumbled feta, goat cheese, or shredded mozzarella

Instructions

  1. Prepare the Sweet Potatoes: Peel and dice the sweet potatoes into small, uniform cubes. Toss them with olive oil, salt, pepper, and your choice of herbs. Spread them on a baking sheet and roast at 400°F (200°C) for 20-25 minutes until tender and slightly caramelized, enhancing their natural sweetness.
  2. Prepare the Crescent Dough: While the sweet potatoes roast, unroll the crescent roll dough on a clean surface. Separate the dough into triangles as per package instructions, preparing them for filling.
  3. Assemble the Bites: Spoon about one tablespoon of roasted sweet potato onto the wide end of each crescent triangle. Add any optional cheese, herbs, or spices on top of the filling. Carefully roll the dough from the wide end toward the narrow tip, sealing the filling inside to form bite-sized parcels.
  4. Bake the Crescent Bites: Place the assembled bites on a parchment-lined baking sheet with some space between each. Bake at 375°F (190°C) for 12-15 minutes or until the dough is puffed up and golden brown. Remove from oven and allow to cool slightly before serving.
