Ingredients

Protein

  • Boneless, skinless chicken breast – about 1 lb (450 g), cut into thin strips or bite-sized pieces

Marinade and Sauce

  • Sweet chili sauce – 1/2 cup (120 ml)
  • Garlic – 2 cloves, minced
  • Fresh ginger – 1 tablespoon, grated
  • Freshly squeezed lime juice – 1 tablespoon

Vegetables and Herbs

  • Crisp lettuce leaves – 1 cup, chopped or whole leaves for layering
  • Shredded carrots – 1/2 cup
  • Sliced cucumbers – 1/2 cup
  • Optional fresh cilantro or parsley – a small handful, chopped

Wraps

  • Soft flour tortillas – 4 large

Optional Additions

  • Sriracha or fresh chopped chili peppers – to taste (for extra heat)
  • Toasted peanuts or cashews – 1/4 cup (for crunch)
  • Shredded mango or pineapple – 1/4 cup (for a tropical twist)
  • Large lettuce leaves – as substitute for tortillas (for low-carb option)

Instructions

  1. Prepare the Chicken: Cut the chicken breast into thin strips or bite-sized pieces. In a bowl, marinate the chicken with sweet chili sauce, minced garlic, grated ginger, and freshly squeezed lime juice. Let it sit for at least 15 minutes to soak up the vibrant flavors.
  2. Cook the Chicken: Heat a non-stick skillet over medium heat. Add the marinated chicken and cook for 6 to 8 minutes, stirring occasionally, until the chicken is fully cooked, caramelized, and coated in the sticky, glossy sweet chili sauce.
  3. Prep Your Veggies: While the chicken cooks, rinse and chop the fresh vegetables including crisp lettuce, julienned carrots, and sliced cucumbers. Prepare any optional herbs or extras you want to include.
  4. Assemble the Wraps: Lay a soft flour tortilla flat on a clean surface. Place a bed of lettuce on the tortilla, add a generous layer of the cooked chicken strips, then top with shredded carrots, sliced cucumbers, and fresh herbs if using.
  5. Wrap and Serve: Fold in the sides of the tortilla and roll tightly to form a neat wrap. For an extra touch, optionally grill the wraps lightly on a pan, or serve cold as preferred.

Notes

  • Marinate Well: Even a short 15-minute marinade allows the chicken to absorb bold, vibrant flavors.
  • Don’t Overcook: Cook chicken just until done to keep it tender and juicy and avoid dryness.
  • Fresh Veggies: Use crisp, fresh vegetables for contrast in texture and vibrant colors.
  • Warm Your Tortillas: Lightly warming tortillas makes them more pliable and enhances their flavor.
  • Balance the Heat: Adjust chili sauce and fresh chili peppers according to your preferred spice level.
  • Storage: Store chicken and veggies separately in airtight containers for up to 3 days; keep tortillas separate to avoid sogginess.
  • Freezing: Cooked chicken can be frozen, but avoid freezing assembled wraps as it affects texture.
  • Reheating: Reheat chicken gently before assembling wraps for best results.
