Instructions

  1. Prepare the Dough: Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until smooth. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until a soft, pliable dough forms.
  2. Roll and Cut the Cookies: Lightly dust your work surface with flour and roll out the dough to about 1/4 inch thickness. Using a large rectangular cookie cutter or a knife, cut out pairs of matching rectangles that will be used to sandwich the filling.
  3. Add the Strawberry Filling: Place half of the cookie rectangles on a baking sheet lined with parchment paper. Spoon approximately one teaspoon of strawberry preserves onto each rectangle, spreading slightly but keeping away from the edges. Top with the matching rectangle and press edges together firmly using a fork to seal the filling inside.
  4. Bake Until Golden: Preheat the oven to 350°F (175°C). Bake the cookies for 12 to 15 minutes or until the edges are a golden brown color. Remove from the oven and transfer the cookies to a wire rack to cool completely and allow them to firm up.
  5. Glaze and Decorate: Whisk the powdered sugar with milk or cream a little at a time until a smooth drizzle consistency is reached. Generously drizzle the glaze over the cooled cookies.
