Instructions

  1. Prepare the Steak Bites: Cut the steak into bite-sized cubes, pat dry, and season well with salt and pepper. Heat a skillet over medium-high heat with butter and sear the steak bites in batches until browned on all sides but still tender inside. Remove the steak from the skillet and set aside.
  2. Cook the Rotini: While the steak cooks, bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain the pasta, reserving a small cup of pasta water to loosen the sauce if needed.
  3. Make the Garlic Parmesan Sauce: In the same skillet, reduce heat to medium and add the minced garlic. Cook gently until fragrant, about 1-2 minutes, taking care not to brown the garlic. Pour in the heavy cream and simmer gently to thicken slightly. Stir in the grated parmesan cheese until melted and creamy. Season the sauce with a pinch of salt and pepper to taste.
  4. Combine Pasta and Steak: Return the cooked steak bites to the skillet with the sauce, then add the drained rotini. Toss everything gently to coat the pasta and steak evenly with the creamy garlic parmesan sauce. Add reserved pasta water as needed to adjust the sauce consistency for a smooth, luscious texture.
  5. Garnish and Serve: Sprinkle the dish with freshly chopped parsley for a bright, fresh finish. Serve immediately for the best flavor and texture.
