Ingredients

Scale

Chicken and Coating

  • 2 boneless fresh chicken breasts
  • 1 cup buttermilk
  • 1 tsp salt (for marinade)
  • 2 tbsp paprika
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch

Homemade Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp hot sauce
  • Salt and pepper to taste

Sandwich Assembly

  • 4 brioche buns
  • Fresh lettuce leaves
  • 2 medium tomatoes, sliced

Instructions

  1. Marinate the Chicken: Soak the chicken breasts in buttermilk mixed with a pinch of salt and half of the spice mix (paprika, cayenne, garlic powder, black pepper) for at least 1 hour to tenderize the meat and infuse flavor.
  2. Prepare the Coating: In a shallow dish, mix the flour, cornstarch, and the remaining half of the spice mix to create a crunchy, flavorful coating.
  3. Bread the Chicken: Remove chicken from the buttermilk and thoroughly dredge each piece in the flour mixture, pressing firmly to ensure a good crust forms.
  4. Fry the Chicken: Heat oil in a deep pan or fryer to 350°F (175°C). Fry chicken breasts until golden brown and cooked through, about 6-8 minutes per side depending on thickness. Drain on paper towels to remove excess oil.
  5. Make the Creamy Homemade Sauce: Whisk together mayonnaise, sour cream, minced garlic, lemon juice, hot sauce, salt, and pepper until smooth and tangy. Chill slightly to meld flavors.
  6. Assemble the Sandwich: Lightly toast brioche buns, spread a generous layer of the creamy sauce on both top and bottom halves, layer fresh lettuce and tomato slices, add the spicy fried chicken, and crown with the top bun.

Notes

  • Marinate chicken overnight if possible for maximum tenderness and flavor.
  • Use a thermometer to ensure the chicken reaches an internal temperature of 165°F.
  • For extra crunch, double-dip the chicken by dipping back into buttermilk then flour mixture before frying.
  • Maintain oil temperature between 350°F and 360°F to avoid burning or oily chicken.
  • Let the fried chicken rest a couple of minutes before assembling to allow juices to redistribute.
