  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ¼ to ½ tsp cayenne pepper (adjust to taste)
  • ½ tsp garlic powder
  • Sea salt, to taste
  • Black pepper, to taste

Toppings & Garnish

  • ½ cup blue cheese crumbles (optional)
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Sweet Potatoes: Wash and slice sweet potatoes into thick rounds or halves, keeping the skins on. Drizzle with olive oil and season with sea salt and black pepper. Arrange evenly on a baking sheet.
  2. Slow Roast the Sweet Potatoes: Roast in a preheated oven at 300°F (150°C) for 1.5 to 2 hours until tender and caramelized, turning halfway through for even cooking.
  3. Make Spicy Chickpeas: Toss drained chickpeas with olive oil, smoked paprika, cayenne pepper, garlic powder, salt, and pepper. Spread on a separate baking sheet and roast at 400°F (200°C) for 20-25 minutes until crisp and flavorful, shaking halfway through for extra crispiness.
  4. Assemble the Dish: Arrange roasted sweet potatoes on a serving platter. Top generously with the spicy roasted chickpeas. Sprinkle blue cheese crumbles over while chickpeas are still warm, allowing the cheese to soften slightly.
