Ingredients

Scale

Protein

  • 2 lbs boneless, skinless chicken breasts or thighs

Beans

  • 2 (15 oz) cans Cannellini or Great Northern white beans, drained and rinsed

Vegetables & Aromatics

  • 1 (4 oz) can diced mild green chilies
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 12 fresh jalapeños, seeded and chopped (optional for spice)

Liquids

  • 4 cups chicken broth

Spices

  • 2 tsp ground cumin
  • 1 tsp dried oregano

Dairy & Fresh Finishes

  • 4 oz cream cheese or ½ cup sour cream
  • Juice of 1 lime

Instructions

  1. Prepare and Layer Ingredients: Place the chicken breasts or thighs at the bottom of the slow cooker. Layer on the white beans, diced green chilies, chopped onion, minced garlic, and spices evenly over the chicken.
  2. Add Liquids and Cook: Pour chicken broth over the ingredients until just covered. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and shred easily.
  3. Shred Chicken and Stir in Creaminess: Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the pot, then add cream cheese or sour cream. Stir well until the chili reaches a creamy and smooth consistency.
  4. Finish with Freshness: Just before serving, squeeze fresh lime juice into the chili and adjust salt or spices to taste to brighten and layer the flavors.

Notes

  • Use bone-in chicken for deeper broth flavor but be sure to remove bones before shredding.
  • Don’t skip adding cream cheese or sour cream for a velvety texture and balanced flavor.
  • Layer all ingredients except cream cheese the night before for easy meal prep; add dairy just before serving.
  • Adjust consistency by adding more broth if too thick or cooking uncovered to thicken if needed.
  • Garnish generously with sliced avocado, fresh cilantro, shredded cheese, jalapeño slices, and sour cream for extra flavor and presentation.
