Ingredients

Scale

Chicken

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • Pinch of salt
  • 1 tbsp lemon juice (optional)
  • 1/4 cup classic Caesar dressing

Wrap Assembly

  • 46 large tortillas or wraps (flour, whole wheat, spinach, or gluten-free as preferred)
  • 2 cups chopped romaine lettuce
  • 1/2 cup grated Parmesan cheese
  • Extra Caesar dressing for drizzling

Optional Additions & Variations

  • Hot sauce or cayenne pepper (for spicy twist)
  • Avocado slices
  • Grilled tofu or roasted chickpeas (vegetarian alternative)
  • Toasted pine nuts or crunchy croutons

Instructions

  1. Prepare the Chicken: Season the chicken breasts or thighs with garlic powder, black pepper, and a pinch of salt. Place them in the slow cooker, then pour lemon juice and 1/4 cup Caesar dressing over the chicken to infuse flavor as it cooks.
  2. Slow Cook the Chicken: Set the slow cooker on low for 4-6 hours or high for 2-3 hours, until the chicken is tender and easily shredded with a fork.
  3. Shred the Chicken: Carefully remove the cooked chicken from the slow cooker and shred using two forks. Return shredded chicken to the slow cooker juices to keep it moist and absorb more flavor.
  4. Assemble the Wraps: Lay out your tortillas or wraps. Add a generous portion of shredded chicken, then top with chopped romaine lettuce, grated Parmesan cheese, and an extra drizzle of Caesar dressing.
  5. Roll and Enjoy: Fold the sides of the wrap and roll tightly to enclose the fillings. Slice in half if desired and serve immediately or wrap tightly for later use.

Notes

  • Use thick Caesar dressing for better cling and flavor distribution.
  • Do not overcook chicken to prevent dryness; monitor slow cooker timing.
  • Warm tortillas slightly before assembling for easier rolling and improved texture.
  • Add crunchy ingredients like croutons or nuts just before serving to maintain texture.
  • Season chicken lightly with salt at the start as Parmesan and dressing contribute saltiness.
