Ingredients

Scale

Seafood

  • 1 lb peeled, deveined raw shrimp

Aromatics

  • 1 medium onion, diced
  • 3 cloves garlic, minced

Vegetables & Beans

  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned or frozen)

Liquids & Base

  • 4 cups chicken broth
  • 2 tablespoons fresh lime juice

Spices

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

Herbs

  • ¼ cup fresh cilantro, chopped

Optional Garnishes

  • Avocado slices
  • Diced tomatoes
  • Shredded cheese
  • Sour cream
  • Additional cilantro

Instructions

  1. Sauté Aromatics: Heat a bit of oil in a large pot over medium heat. Add diced onions and minced garlic, cooking until translucent and fragrant to build the base flavor for the soup.
  2. Build the Broth: Pour in the chicken broth, diced tomatoes, chili powder, cumin, and smoked paprika. Stir to combine and bring the mixture to a gentle boil to allow flavors to blend.
  3. Add Veggies and Beans: Stir in drained black beans and corn kernels. Reduce heat to a simmer and cook for 10 minutes so the ingredients soften and combine.
  4. Cook the Shrimp: Add raw shrimp to the pot and simmer until they turn pink and are cooked through, about 4 to 5 minutes. Be careful not to overcook to keep shrimp tender.
  5. Finish with Freshness: Remove the pot from heat and stir in fresh lime juice and chopped cilantro to brighten the soup with a fresh, zesty finish.

Notes

  • Use fresh or high-quality frozen shrimp for best flavor and texture.
  • Do not overcook the shrimp; add them last and remove from heat promptly.
  • Adjust spice levels gradually; start mild and add more chili powder, cayenne, or jalapeños as desired.
  • Taste and season gradually to avoid overpowering the shrimp’s delicate flavor.
  • Garnish generously with lime, cilantro, cheese, or avocado to enhance flavors.
