Ingredients

Scale

Protein

  • 1 lb Italian pork sausage (or turkey sausage for leaner option)

Pasta

  • 9 oz fresh or frozen cheese tortellini

Vegetables

  • 2 medium sweet potatoes, peeled and cubed
  • 3 cups baby spinach
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Liquids & Oils

  • 4 cups chicken broth
  • 2 tbsp olive oil

Seasonings

  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Prepare the base: Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for another 1 minute until fragrant, building the flavorful foundation of your soup.
  2. Brown the sausage: Add the sausage, breaking it up with a wooden spoon as it cooks. Let it brown evenly and render some of its fat for rich flavor, about 5 to 7 minutes. Drain excess fat if necessary to keep the soup from becoming greasy.
  3. Add sweet potatoes and seasonings: Stir in the peeled, cubed sweet potatoes followed by Italian seasoning, salt, and pepper. Toss everything together to coat the potatoes and sausage evenly with the herbs.
  4. Pour in the broth and simmer: Pour in the chicken broth and bring the mixture to a boil. Reduce heat and let it simmer gently for about 10-12 minutes, or until the sweet potatoes are tender and easy to pierce with a fork.
  5. Incorporate tortellini and spinach: Add the tortellini directly into the simmering soup and cook according to package instructions, typically 3 to 5 minutes. Just before serving, stir in the fresh baby spinach so it wilts slightly but retains its vibrant color and nutrients.

Notes

  • Use fresh tortellini for faster cooking and a lighter texture.
  • Don’t overcook the spinach; add it at the very end to maintain its bright green color and texture.
  • Cut sweet potatoes into uniform cubes for even cooking.
  • Season gradually and taste before adding more salt to avoid over-seasoning.
  • Brown the sausage well to intensify flavor and improve texture.
