Instructions

  1. Prepare the Dough: Warm the milk slightly. Dissolve the yeast with a pinch of sugar in the warm milk and let it activate for about 5-10 minutes until foamy. In a large mixing bowl, combine the flour, sugar, and 1 teaspoon of salt. Add the softened unsalted butter, eggs, and the yeast mixture. Mix by hand or with a stand mixer fitted with a dough hook until a smooth, elastic dough forms.
  2. First Rise: Cover the dough with a clean kitchen towel or plastic wrap. Place it in a warm spot and allow it to rise for 1 to 1.5 hours, or until it doubles in size and becomes airy.
  3. Shape the Rolls: Gently punch down the risen dough to release air. Divide the dough into even portions (about 12 rolls). Shape each piece into a smooth ball and arrange them spaced apart in a buttered baking dish to allow room for expansion.
  4. Second Rise: Cover the shaped rolls again and let them rise in a warm spot for 45 minutes, or until puffy and nearly doubled in size.
  5. Prepare Salted Sage Honey Butter: While the rolls rise, soften the salted butter and mix thoroughly with chopped fresh sage and honey until smooth and fragrant.
  6. Bake and Brush: Preheat the oven to 375°F (190°C). Bake the rolls for 20-25 minutes or until they are golden brown. Immediately after removing from the oven, brush the tops generously with the prepared salted sage honey butter so it melts into the rolls.
