Ingredients

Scale

Main Ingredients

  • 2 cups shredded rotisserie chicken (skin and bones removed)
  • 2 large carrots, chopped
  • 2 celery stalks, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves

Optional Add-ins

  • 1 cup egg noodles or cooked rice (optional)
  • Red pepper flakes or cayenne, for spicy kick (optional)
  • Zucchini, spinach, or kale, chopped (optional)
  • 1/2 cup coconut milk or cream (optional)
  • Rosemary, dill, or basil as alternative herbs (optional)

Instructions

  1. Prepare the Vegetables: Chop the carrots, celery, and onion into bite-sized pieces. These vegetables will provide a flavorful base, releasing sweetness and aroma during cooking.
  2. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, sautéing gently for 3 to 5 minutes until they are soft and fragrant, forming the foundation of the soup’s flavor.
  3. Add Vegetables and Broth: Stir in the chopped carrots and celery, then pour in the chicken broth. Bring the mixture to a gentle boil, then lower the heat to simmer, allowing the vegetables to become tender.
  4. Shred and Add Chicken: While the vegetables simmer, shred the rotisserie chicken using two forks to create bite-sized pieces, removing skin and bones. Add the shredded chicken to the pot and stir to warm through.
  5. Season and Simmer: Season the soup with salt, pepper, fresh parsley, and thyme. Continue to simmer the soup for an additional 10 minutes to meld the flavors.
  6. Optional Add-Ins: If desired, stir in noodles or rice now and cook until tender for a heartier soup. Add any optional vegetables, spices, or cream to customize your soup.

Notes

  • Use quality low-sodium chicken broth for better control over seasoning and improved flavor.
  • Do not overcook the rotisserie chicken; it only needs to be warmed through to stay tender and juicy.
  • Add fresh herbs near the end of cooking to preserve their bright flavor and color.
  • Taste and adjust salt and pepper gradually for perfectly balanced seasoning.
  • Remove skin from rotisserie chicken to avoid greasy broth and keep the soup light.
