  • 1/2 cup mayonnaise
  • 2 tbsp prepared horseradish
  • 1 tbsp fresh lemon juice
  • Salt, a pinch
  • Black pepper, a pinch

Instructions

  1. Prep the Shrimp: Preheat your oven to 400°F (200°C). Rinse the shrimp and pat them dry thoroughly to ensure even roasting and an ideal texture. Place the shrimp in a bowl, drizzle with olive oil, and sprinkle with garlic powder, smoked paprika, salt, and black pepper. Toss well to coat each piece evenly.
  2. Roast the Shrimp: Arrange the shrimp in a single layer on a baking sheet lined with parchment paper. Roast for 8-10 minutes or until the shrimp turn pink and are just cooked through. Be careful not to overcook to maintain tenderness.
  3. Make the Lemon Horseradish Aioli: While the shrimp roast, combine mayonnaise, prepared horseradish, freshly squeezed lemon juice, a pinch of salt, and black pepper in a small bowl. Whisk until smooth and creamy. Taste and adjust seasoning or lemon juice to balance tang and heat as desired.
  4. Serve and Garnish: Transfer the roasted shrimp to a serving dish. Serve the lemon horseradish aioli on the side in a bowl. Garnish the shrimp with chopped fresh parsley and lemon wedges for added color and freshness.
