Ingredients

Scale

Vegetables

  • 2 medium cauliflower heads, cut into florets
  • 1 whole head of garlic, cloves separated
  • 1 medium onion, chopped

Dairy & Fat

  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 cup heavy cream or milk
  • 2 tablespoons olive oil or butter

Liquids & Seasoning

  • 4 cups vegetable or chicken broth
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Roast the Garlic and Cauliflower: Preheat your oven to 400°F (200°C). Toss cauliflower florets and whole garlic cloves with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 25-30 minutes until golden and tender to develop a deep, caramelized flavor.
  2. Sauté the Onion: While roasting, heat butter or olive oil in a pan over medium heat. Add chopped onion and sauté until translucent and fragrant, creating a savory flavor base for the soup.
  3. Blend the Soup Base: Once roasted, squeeze the garlic cloves out of their skins and transfer them along with the roasted cauliflower, sautéed onions, and broth into a blender or food processor. Puree until smooth and creamy. Add more broth if needed to adjust consistency.
  4. Heat the Soup and Add Cheese: Pour the pureed mixture into a pot over medium heat. Slowly stir in shredded sharp cheddar cheese and cream, making sure the cheese melts fully without boiling to maintain a silky texture.
  5. Season and Serve: Taste the soup and adjust seasoning with salt and pepper as desired. Ladle into bowls and garnish with optional toppings such as chopped chives, crispy bacon bits, or toasted croutons. Enjoy your warm, flavor-packed bowl of soup!

Notes

  • Roasting garlic and cauliflower enhances the soup’s natural sweetness and depth of flavor.
  • Use sharp cheddar cheese for a better melt and pronounced flavor.
  • Avoid overheating the cheese to prevent graininess; melt gently off heat or on low heat.
  • Adjust soup thickness by adding more broth or simmer to reduce.
  • Let soup cool slightly before blending to avoid splatters and achieve a smooth texture.
