Ingredients

Scale

Main Ingredients

  • 1 large head cauliflower, cut into florets
  • 23 tablespoons olive oil
  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • Salt, to taste
  • Black pepper, to taste

Optional Ingredients

  • 1/2 cup cream or milk (dairy or plant-based) for extra silkiness
  • Fresh herbs (thyme, parsley, rosemary, basil, or dill), chopped
  • Red pepper flakes or smoked paprika (for a spicy kick)
  • Grated Parmesan or sharp cheddar cheese (for cheesy twist)
  • Toasted nuts (almonds or walnuts) for garnish

Instructions

  1. Roast the Cauliflower: Preheat the oven to 425°F (220°C). Toss cauliflower florets with olive oil, salt, and pepper. Spread them evenly on a baking sheet, ensuring they are not crowded, and roast for 25-30 minutes until golden and tender, developing rich caramelized flavor.
  2. Sauté Aromatics: While the cauliflower roasts, heat a bit of olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing gently until soft and fragrant to build a savory flavor base.
  3. Combine and Simmer: Add the roasted cauliflower to the pot with the sautéed aromatics. Pour in the warm broth and bring to a gentle simmer. Let it cook for 10-15 minutes to allow the flavors to meld and deepen.
  4. Blend Until Smooth: Use an immersion blender directly in the pot or transfer the soup in batches to a countertop blender. Blend until silky smooth and creamy. If desired, stir in a splash of cream, dairy-free milk, or cashew cream for added richness.
  5. Season and Serve: Taste the soup and adjust seasoning with salt, pepper, and fresh herbs or spices as preferred. Ladle into bowls and garnish with your choice of olive oil drizzle, toasted pumpkin seeds, fresh parsley, crispy croutons, or nuts.

Notes

  • Spread cauliflower florets evenly on the baking sheet to avoid steaming and ensure even caramelization.
  • Use warm broth to maintain soup temperature and integrate flavors better.
  • Blend soup in batches if using a countertop blender to prevent spills and achieve the smoothest texture.
  • Adjust soup thickness by adding more broth for a thinner consistency or roasting extra cauliflower for a thicker soup.
  • Add fresh herbs right before serving to preserve brightness and vibrant color.
