  • 1 (8 oz) can refrigerated crescent roll dough (2 packages total)
  • 8 oz thinly sliced or chopped corned beef
  • 1 cup sauerkraut, drained thoroughly
  • 1 to cups shredded Swiss cheese
  • ½ cup Thousand Island dressing, plus extra for serving

Instructions

  1. Prepare the Ingredients: Drain the sauerkraut thoroughly by pressing it in a sieve or using a clean kitchen towel to squeeze out all excess liquid. Chop or slice the corned beef into bite-sized pieces and shred Swiss cheese if not pre-shredded.
  2. Preheat the Oven and Prepare Baking Dish: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish to prevent sticking and set aside.
  3. Layer the Crescent Dough: Unroll crescent rolls from the first package and press the seams together to form one large sheet. Evenly press this dough into the bottom of the greased baking dish creating a solid base layer.
  4. Add the Filling Layers: Spread the drained sauerkraut evenly over the dough. Scatter chopped corned beef evenly on top. Then sprinkle a generous layer of shredded Swiss cheese over the meat to bind the flavors.
  5. Fold and Cover with Dough: Unroll the crescent rolls from the second package and cover the filling, sealing edges by pinching dough tightly to form a sealed “envelope” around the filling ensuring nothing leaks during baking.
  6. Bake Until Golden: Place the dish in the oven and bake for 25–30 minutes or until the top dough is golden brown and puffed. Remove from oven and let cool slightly for at least 10 minutes to set.
  7. Finish with Thousand Island Dressing: Drizzle or spread Thousand Island dressing on top, or serve it on the side for dipping, adding the classic tangy Reuben flavor finish.
