Instructions

  1. Prepare the Custard Mixture: Heat the heavy cream in a saucepan over medium heat until it just begins to simmer. In a separate bowl, whisk together the egg yolks, sugar, pumpkin puree, pumpkin spice mix, and vanilla extract until smooth and creamy. Slowly pour the hot cream into the egg mixture, whisking constantly to temper the eggs and prevent curdling.
  2. Strain and Pour into Ramekins: Strain the custard mixture through a fine sieve into a clean bowl to ensure a silky smooth texture. Evenly distribute the mixture into ramekins or small oven-safe dishes, filling each nearly to the top.
  3. Bake in a Water Bath: Place the ramekins in a deep baking dish and pour hot water halfway up their sides to create a bain-marie. Bake in a preheated oven at 325°F (160°C) for 40-45 minutes, or until the custard is set but still slightly jiggles in the center.
  4. Chill and Set: Remove the ramekins from the water bath and cool to room temperature. Refrigerate for at least 3 hours or overnight to allow the custard to fully set and develop flavor.
  5. Caramelize the Tops: Before serving, sprinkle an even layer of sugar over each custard surface. Use a kitchen torch to caramelize the sugar until it forms a hard, golden crust. Let the sugar harden for a minute before enjoying the classic crack when tapped with a spoon.
