Instructions

  1. Prepare the Wet Ingredients: Cream the softened butter with brown sugar and light granulated sugar together until light and fluffy. Beat in the egg, followed by the vanilla extract and pumpkin puree, mixing until fully combined and smooth.
  2. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg to evenly distribute the leavening agents and spices.
  3. Mix Dry and Wet Ingredients: Gradually fold the dry ingredient mixture into the wet ingredients until just combined, being careful not to overmix to keep the cookies tender and soft.
  4. Add Chocolate Chips and Optional Mix-Ins: Stir in the chocolate chips evenly throughout the dough. At this stage, you can also fold in nuts or any other preferred add-ins.
  5. Portion and Bake: Scoop portions of dough onto a parchment-lined baking sheet, leaving space between each cookie. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes until the edges are golden but centers remain soft. Let cool slightly before serving.
