Ingredients

Scale

Brisket and Cooking Ingredients

  • 3 to 4 pounds well-marbled brisket
  • 1 bottle (12 oz) pumpkin beer
  • 2 medium onions, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Freshly ground black pepper, to taste

Buns and Cheese

  • 6 pretzel buns
  • 6 to 8 slices Swiss or Cheddar cheese (or choice of creamy cheese)

Other

  • Butter, for toasting buns

Instructions

  1. Prepare the Brisket: Season the brisket generously with salt, pepper, smoked paprika, and thyme. Heat a pan over high heat and sear the brisket on all sides until a deep crust forms, sealing in the flavors and juices.
  2. Slow Cook with Pumpkin Beer: Transfer the seared brisket to a slow cooker or Dutch oven. Add the sliced onions, minced garlic, and pour in the pumpkin beer. Cover and cook on low heat for 6 to 8 hours until the meat is fall-apart tender.
  3. Shred the Brisket: Remove the brisket from the cooker, place it on a cutting board, and let it rest briefly. Using two forks, shred the meat finely to prepare for the melts.
  4. Toast the Pretzel Buns: Lightly butter the pretzel buns and toast them in a skillet or oven until golden brown and crispy on the outside yet soft inside.
  5. Assemble the Melts: Place a generous amount of shredded brisket on the bottom half of each pretzel bun. Layer with slices of creamy cheese. Optionally, broil briefly until the cheese melts and bubbles. Top with the other bun half and serve immediately.

Notes

  • Cook brisket low and slow for tender, juicy meat.
  • Use high-quality pretzel buns for best texture and flavor.
  • Allow brisket to rest before shredding to retain juices.
  • Assemble sandwiches quickly and broil for a gooey cheese finish.
  • Reserve some cooking liquid to drizzle over shredded brisket for added moisture and flavor.
