Ingredients

Scale

For the Bread

  • 3 very ripe bananas, mashed
  • 1 cup pumpkin puree
  • 2 cups all-purpose flour (or gluten-free flour blend)
  • 3/4 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 2 large eggs
  • 1/3 cup vegetable oil or melted butter
  • 1 tsp vanilla extract

For the Maple Glaze

  • 1/2 cup powdered sugar
  • 23 tbsp pure maple syrup

Instructions

  1. Prep Your Ingredients: Preheat your oven to 350°F (175°C). Mash the ripe bananas and mix them with pumpkin puree in a large bowl to create the moist, flavorful base of the bread.
  2. Combine Dry Ingredients: In a separate bowl, whisk together the flour, brown sugar, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt. This mixture will ensure the bread rises properly and is flavorful.
  3. Mix Wet Ingredients: To the banana-pumpkin mixture, add the eggs, vanilla extract, and your chosen fat (vegetable oil or melted butter). Stir gently until just combined to keep the texture light.
  4. Bring Wet and Dry Together: Gradually fold the dry ingredients into the wet mixture, stirring carefully and just until combined to avoid overmixing which can make the bread dense.
  5. Bake the Bread: Pour the batter into a greased loaf pan and smooth the top. Bake for 55 to 65 minutes or until a toothpick inserted in the center comes out clean. Allow the bread to cool for about 10 minutes.
  6. Prepare the Maple Glaze: In a small bowl, mix powdered sugar with pure maple syrup until smooth and pourable. Drizzle the glaze generously over the warm bread before slicing to add a shiny, sweet finish.

Notes

  • Use very ripe bananas for optimal sweetness and moistness.
  • Do not overmix the batter to maintain a tender crumb.
  • Use an oven thermometer to ensure accurate baking temperature.
  • Let the bread cool slightly before applying the glaze so it sets properly.
  • Store leftovers in an airtight container at room temperature to keep bread moist.
