Ingredients

Scale

Main Ingredients

  • 3 ripe bananas
  • 1/2 cup protein powder (whey or plant-based)
  • 1 1/2 cups whole wheat flour
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract

Optional Add-ins

  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/2 cup dark chocolate chips
  • 1 tablespoon chia seeds or flax seeds

Instructions

  1. Prepare Your Ingredients: Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper. Mash the ripe bananas in a mixing bowl until smooth but still slightly chunky to maintain texture.
  2. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, Greek yogurt, honey or maple syrup, and vanilla extract until fully combined and creamy.
  3. Combine Dry Ingredients: In another bowl, sift whole wheat flour, protein powder, baking soda, baking powder, and cinnamon. Stir well to evenly distribute all dry ingredients.
  4. Bring Wet and Dry Together: Pour the wet mixture into the dry ingredients and gently fold using a spatula. Avoid overmixing to keep the bread tender. Fold in any optional nuts, chocolate chips, or seeds now.
  5. Bake and Cool: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool completely before slicing for the best texture.

Notes

  • Use overripe bananas for the best sweetness and softness.
  • Do not overmix the batter to ensure a light crumb.
  • Check the oven temperature with a thermometer to ensure proper baking.
  • Allow the bread to cool fully to firm up before slicing.
  • Experiment with different types of protein powder and adjust liquids as needed.
