Instructions

  1. Prepare and cook the sausage: Heat a splash of olive oil in a large oven-safe pan over medium heat. Crumble Italian sausage into the pan and cook until browned and cooked through, stirring occasionally to break it apart evenly.
  2. Sauté aromatics and add peppers: Add finely chopped onions and minced garlic to the sausage, cooking until fragrant and translucent. Stir in diced roasted red peppers, allowing the flavors to meld for a couple of minutes.
  3. Layer the lasagne: Spread a thin layer of tomato sauce over the sausage mixture, then arrange lasagne sheets on top, breaking to fit as necessary. Dollop ricotta cheese evenly over the sheets, then sprinkle shredded mozzarella. Repeat layering until the pan is full, finishing with a topping of mozzarella and fresh herbs if desired.
  4. Bake until bubbly and golden: Preheat your oven to 375°F (190°C). Cover the pan with foil and bake for 25 minutes, then remove the foil and bake an additional 10-15 minutes until the cheese is melted and golden brown.
