Ingredients

Scale

Pasta

  • 12 oz rotini pasta

Meat & Aromatics

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced

Spices & Seasonings

  • 2 tbsp Cajun seasoning (adjust to taste)

Dairy & Cheese

  • 8 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup milk or cream

Vegetables & Others

  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp olive oil or butter

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, then add the rotini pasta and cook according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water for the sauce.
  2. Sauté Aromatics and Beef: Heat olive oil or butter in a large skillet over medium heat. Add finely chopped onions and minced garlic, cooking until soft and fragrant. Then add the ground beef, breaking it apart and cooking until browned and fully cooked.
  3. Season the Beef: Sprinkle generous amounts of Cajun seasoning over the beef mixture, stirring well to coat. Add the can of diced tomatoes and stir together, allowing the flavors to meld and the sauce to thicken over medium-low heat.
  4. Prepare the Velveeta Sauce: In a separate saucepan, heat milk or cream gently and add cubed Velveeta cheese. Stir constantly until melted into a smooth, creamy sauce. If needed, thin with a splash of reserved pasta water to get the perfect consistency.
  5. Combine Pasta and Sauce: Pour the Velveeta sauce into the skillet with the spicy Cajun beef mixture and stir well. Add the cooked rotini pasta, tossing gently so that every piece is evenly coated with that luscious sauce.
  6. Add Mozzarella and Serve: Sprinkle shredded mozzarella evenly over the top, cover the skillet, and let sit for a few minutes or place briefly under a broiler to melt and slightly brown the cheese for an irresistible finish.

Notes

  • Use fresh Cajun seasoning or a high-quality store brand for the best flavor.
  • Do not overcook the pasta; al dente rotini holds sauce better and prevents mushiness.
  • Reserve some pasta water to adjust the cheese sauce consistency without diluting flavor.
  • Melt Velveeta on low heat, stirring often to avoid separation or burning.
  • Customize the spice level by adjusting the amount of Cajun seasoning to your preference.
