Filling

  • 3 cups crisp, tart apples (such as Granny Smith or Honeycrisp), peeled, cored, and finely chopped
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 6 small pats of butter (about 1 teaspoon each)

Crust

  • Store-bought or homemade pie dough, enough to cut circles for about 12 mini pies
  • Extra dough for top crust or decorative shapes

Topping

  • 1 beaten egg or milk (for brushing)
  • Sugar for sprinkling

Instructions

  1. Prepare the Apples: Peel, core, and finely chop your apples into small pieces. Toss them in a bowl with granulated sugar, brown sugar, cinnamon, nutmeg (if using), lemon juice, and cornstarch until evenly coated to bring out their natural sweetness and flavor.
  2. Roll Out the Dough: On a lightly floured surface, roll out your pie crust dough until it is about 1/8-inch thick. Use a round cookie cutter or glass to cut out circles slightly larger than your mini pie tins or muffin cups.
  3. Assemble the Pies: Place each dough circle into greased mini pie tins or a muffin pan. Spoon the apple filling into the center of each crust, leaving enough space around the edges to seal. Add a small pat of butter on top of the filling for added richness.
  4. Add the Top Crust: Cut smaller dough circles or decorative shapes to use as lids. Place them over the filling and press the edges to seal, using a little water if needed. Cut small slits on top to allow steam to escape during baking.
  5. Bake Your Mini Apple Pies: Brush the tops with beaten egg or milk for a golden finish, then sprinkle with a little sugar. Bake at 375°F (190°C) for 20-25 minutes, or until the crust is golden brown and the filling is bubbling.
