  • 1/2 cup Kalamata olives, pitted and sliced
  • 2 cups fresh spinach or kale
  • 1 tsp dried oregano (or 1 tbsp fresh oregano, chopped)
  • 1 tsp dried thyme (or 1 tbsp fresh thyme, chopped)
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Prepare Your Ingredients: Chop the onion, mince the garlic, and slice the bell peppers to have everything ready for cooking.
  2. Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add onions and garlic, cooking them for about 3-4 minutes until soft and fragrant.
  3. Brown the Ground Beef: Add ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, stirring occasionally for even cooking.
  4. Incorporate Vegetables and Seasonings: Stir in bell peppers, diced tomatoes with their juices, Kalamata olives, oregano, and thyme. Let the mixture simmer so flavors meld together.
  5. Finish with Greens: Add spinach or kale last and stir until wilted. Taste, then season with salt and pepper as needed before serving.
