Ingredients

Scale

Meatball Mixture

  • 1 lb lean ground beef or turkey
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Sauce and Topping

  • 1 cup marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • Olive oil, for brushing

Bread

  • 68 mini hoagie rolls or dinner rolls

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine the ground beef or turkey, Italian breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix gently but thoroughly to keep the texture light and tender. Form the mixture into small, bite-sized meatballs about one inch in diameter.
  2. Cook the Meatballs: Heat olive oil in a skillet over medium heat. Add the meatballs and cook until browned on all sides and cooked through, about 8-10 minutes. Alternatively, bake them on a parchment-lined sheet at 400°F (205°C) for 12-15 minutes if you prefer a hands-off approach.
  3. Prepare the Rolls: Slice mini hoagie rolls lengthwise without cutting all the way through, creating a pocket for the filling. Brush the cut sides lightly with olive oil to help them toast nicely.
  4. Assemble the Sub Bites: Spoon a small amount of marinara sauce inside each roll, then place two or three cooked mini meatballs inside. Top generously with shredded mozzarella cheese.
  5. Bake Until Melty: Place the assembled bites on a baking sheet and bake at 375°F (190°C) for about 5-7 minutes, or until the cheese is melted and bubbly. Serve warm with extra marinara sauce for dipping.

Notes

  • Use fresh herbs like basil or parsley sprinkled on top for added brightness.
  • Do not overmix the meat to avoid dense, tough meatballs.
  • Choose soft rolls that absorb sauce without becoming soggy.
  • Lightly toast the rolls before assembling to add texture and prevent sogginess.
  • Make ahead by cooking meatballs and assembling subs a day before and baking before serving.
