Instructions

  1. Prepare the Mac and Cheese: Cook elbow macaroni according to package directions until al dente. Drain and set aside. In a saucepan, melt butter over medium heat. Whisk in flour and cook for about 1 minute. Gradually add milk while whisking continuously until the mixture thickens. Remove from heat and stir in shredded cheddar and mozzarella cheeses until smooth. Mix the cooked macaroni into the cheese sauce until well coated.
  2. Mix in Pizza Flavors: Stir in diced pepperoni and Italian seasoning into the mac and cheese mixture. Season with salt and black pepper to taste, ensuring the pizza flavors are evenly distributed.
  3. Form the Bites: Allow the mac and cheese mixture to cool slightly. In a separate bowl, beat the eggs. Combine the eggs with the mac and cheese mixture to bind it together. Using your hands or a spoon, scoop small portions and shape them into bite-sized balls or mini patties.
  4. Coat the Bites: Roll each bite in breadcrumbs evenly to form a crispy outer crust. Toss the coated bites with grated Parmesan cheese for an extra golden finish and flavor enhancement.
