Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onions and cook until translucent, about 3 to 4 minutes. Stir in minced garlic and cook for another minute until fragrant, making the base wonderfully aromatic.
  2. Add Vegetables and Spices: Throw in chopped carrots, and sprinkle in cumin and smoked paprika. Stir frequently to toast the spices lightly, unlocking their rich flavors, and coating the vegetables evenly.
  3. Incorporate Lentils and Liquids: Pour in rinsed brown lentils, canned diced tomatoes (with juices), and vegetable broth. Bring the mixture to a boil, then reduce heat to a simmer to develop the flavors slowly.
  4. Simmer Until Tender: Cover the pot and simmer the soup gently for about 25 minutes, or until the lentils and carrots are tender but still hold their shape. Stir occasionally to prevent sticking and to check the consistency.
  5. Season and Garnish: Season with salt and pepper to taste. Remove from heat and stir in freshly chopped parsley or cilantro for a burst of color and freshness right before serving.
