Instructions

  1. Prepare the Ingredients: Wash and slice the zucchini into thin ribbons or spiralize it. Mince the garlic, finely chop the fresh basil, grate the lemon zest, and juice the lemon. Have your pasta ready to cook.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of the pasta water before draining the pasta.
  3. Sauté Garlic and Zucchini: Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the zucchini ribbons and cook for 2–3 minutes, until just tender but still crisp.
  4. Combine Pasta and Sauce: Add the drained pasta to the skillet with the zucchini. Pour in the lemon juice, lemon zest, and a splash of reserved pasta water. Toss thoroughly to combine and allow the flavors to meld together for about a minute.
  5. Finish with Basil and Cheese: Turn off the heat and stir in the chopped fresh basil and grated Parmesan or vegan cheese. Season with salt and pepper to taste. Give one final toss and serve immediately.
