  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian herbs
  • 1 cup shredded cheese, divided (cheddar, mozzarella, or your choice)

  • 1 cup broth or water

Instructions

  1. Prepare the Peppers: Wash bell peppers, slice off the tops, and carefully remove seeds and membranes. Set hollowed peppers aside.
  2. Make the Filling: In a mixing bowl, combine ground meat, cooked rice or quinoa, diced tomatoes, chopped onions, minced garlic, salt, pepper, paprika, Italian herbs, and half of the shredded cheese. Mix well to ensure the flavor is distributed evenly.
  3. Stuff the Peppers: Fill each pepper generously with the meat and rice mixture, pressing down slightly to pack the filling without overflowing. Place the stuffed peppers standing upright on a trivet inside the Instant Pot.
  4. Add Cooking Liquid: Pour 1 cup of broth or water into the Instant Pot to generate steam that will cook the peppers evenly and keep them moist.
  5. Cook Under Pressure: Seal the Instant Pot lid and cook on high pressure for 8 to 10 minutes, adjusting time based on pepper size. Use natural pressure release to allow the peppers to remain tender and intact.
  6. Finish with Cheese: Carefully open the lid, sprinkle the remaining shredded cheese over the hot stuffed peppers, then close the lid for 2 minutes to let the cheese melt perfectly. Serve warm.
