Filling

  • 250g fresh button or cremini mushrooms, finely chopped
  • 2 shallots, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tbsp olive oil or butter
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme leaves
  • Salt and freshly ground black pepper, to taste

Assembly

  • 1 sheet puff pastry (about 12x10 inches), thawed if frozen
  • 150g Gruyère cheese, grated
  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the filling: Finely chop mushrooms, shallots, and garlic. Heat olive oil or butter in a pan over medium heat and sauté until mushrooms release moisture and mixture is soft and fragrant. Stir in chopped fresh herbs, season with salt and pepper, then remove from heat and let cool slightly.
  2. Roll out the puff pastry: On a lightly floured surface, roll the puff pastry sheet into a roughly 12×10 inch rectangle, maintaining even thickness for uniform baking.
  3. Assemble the plait: Spread the cooled mushroom and herb filling down the center of the pastry in a 3-inch wide strip. Generously sprinkle grated Gruyère over the filling. Cut 1-inch wide diagonal strips along both sides of the filling, leaving the center intact. Fold the strips alternately over the filling to create a plait pattern.
  4. Egg wash and bake: Brush the beaten egg over the entire plait surface for a golden finish. Place the plait on a lined baking tray and bake in a preheated oven at 200°C (400°F) for 25-30 minutes until the pastry is puffed, golden, and the cheese melted and bubbling.
