Ingredients

Scale

Meat

  • 34 lbs bone-in pork loin roast

Herb Crust

  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 3 cloves garlic, minced
  • Fresh herbs: rosemary, thyme, sage (finely chopped, about 2 tablespoons each)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ½ cup breadcrumbs (optional)

Instructions

  1. Prepare the Herb Mixture: Finely chop the fresh rosemary, thyme, and sage. In a bowl, combine the chopped herbs with minced garlic, olive oil, Dijon mustard, salt, pepper, and breadcrumbs if using. Stir until a thick, aromatic paste forms to coat the pork.
  2. Season the Pork Roast: Pat the pork roast dry with paper towels to help the herb mixture adhere. Generously season the entire roast with salt and freshly ground black pepper on all sides to enhance flavor.
  3. Apply the Herb Crust: Using a spatula or your hands, press the herb mixture evenly over the entire surface of the pork roast, covering all sides tightly to create a flavorful crust that will remain during cooking.
  4. Roast to Perfection: Preheat the oven to 375°F (190°C). Place the coated pork roast on a roasting rack inside a baking pan for even heat distribution. Roast for approximately 20 minutes per pound or until an internal temperature of 145°F (63°C) is reached for medium doneness.
  5. Rest and Serve: Remove the roast from the oven and tent with foil. Let it rest for 10-15 minutes to allow juices to redistribute, ensuring juicy and tender slices before carving and serving.

Notes

  • Let the pork sit at room temperature for 30 minutes before roasting to ensure even cooking.
  • Use a meat thermometer to guarantee perfect doneness without guesswork.
  • Press the herb crust firmly to help it stay intact and crisp during roasting.
  • Do not skip the resting period to balance the meat’s juices and enhance flavor and tenderness.
  • Save pan drippings to make a quick pan sauce for added depth and richness.
