Ingredients

Scale

For the Chicken

  • 1 lb chicken breast or thighs, trimmed and sliced into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano or 1 tbsp fresh dill, chopped (optional)

For the Tzatziki Sauce

  • 1 medium cucumber, grated and excess moisture squeezed out
  • 1 cup thick Greek yogurt (strained)
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill, chopped
  • 1/4 tsp salt
  • 1/8 tsp black pepper

For Assembly

  • 2 cups cooked quinoa, rice, or preferred grain
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/2 cucumber, sliced
  • Fresh herbs (dill, parsley, or mint), chopped for garnish
  • Olive oil, for drizzling
  • Salt and pepper, to taste

Instructions

  1. Prepare and Marinate the Chicken: Trim and slice chicken breasts or thighs into bite-sized pieces. In a bowl, whisk together olive oil, fresh lemon juice, minced garlic, salt, pepper, and oregano or fresh dill if using. Toss chicken in the marinade and let sit for at least 10 minutes to infuse flavors and tenderize.
  2. Make the Tzatziki Sauce: While the chicken marinates, grate the cucumber and squeeze out excess moisture carefully using a paper towel. Combine grated cucumber, thick Greek yogurt, minced garlic, lemon juice, chopped dill, salt, and pepper in a bowl. Mix thoroughly until creamy and well combined.
  3. Cook the Chicken: Heat a skillet over medium-high heat with a small amount of olive oil. Add marinated chicken pieces in a single layer and cook for 5-7 minutes until golden brown and cooked through, stirring once or twice to ensure even cooking. The chicken should remain juicy with a light char.
  4. Assemble Your Bowl: Begin with a base of cooked quinoa, rice, or preferred grain in a bowl. Top with warm grilled chicken, a generous dollop of tzatziki sauce, halved cherry tomatoes, thinly sliced red onion, and cucumber slices. Garnish with fresh herbs and drizzle with olive oil for rich finishing touches.

Notes

  • Marinate chicken for at least 10 minutes to enhance flavor and tenderness.
  • Squeeze grated cucumber to remove moisture and prevent watery tzatziki sauce.
  • Use thick, strained Greek yogurt for a creamy, non-runny tzatziki.
  • Cook chicken on high heat to develop a flavorful sear without drying out.
  • Fresh herbs like dill and parsley elevate the dish with authentic Mediterranean brightness.
  • Store components separately in airtight containers for up to 3 days in the fridge.
  • Freeze cooked chicken for up to 2 months; avoid freezing tzatziki as texture changes.
  • Reheat chicken gently and add tzatziki fresh for best results.
