Instructions

  1. Prepare Pomegranate Gelatin Base: Gently heat fresh pomegranate juice with caster sugar until warm, then dissolve gelatin in the mixture to create a flavorful base that will set in the dome molds.
  2. Whip the Cream: In a chilled bowl, whip the heavy cream until soft peaks form, achieving an airy texture essential for a light, melt-in-the-mouth mousse.
  3. Melt White Chocolate: Gently melt white chocolate over a warm water bath, preparing it to be folded into the cream mixture.
  4. Combine Ingredients: Carefully fold the warm gelatin-pomegranate mixture into the whipped cream and white chocolate blend, mixing evenly to maintain a smooth, consistent mousse texture.
  5. Mold the Domes: Pour the mousse mixture into silicone dome molds and refrigerate for 4 to 6 hours or overnight until fully set.
  6. Apply the Glossy Glaze: Prepare the mirror glaze by heating gelatin, glucose syrup, and food coloring, then pour the glaze over the frozen mousse domes to achieve a shiny, mirror-like finish. Allow the glaze to set before serving.
