Ingredients

Scale

Main Ingredients

  • 8 oz flank or sirloin steak, thinly sliced
  • 9 oz cheese tortellini (fresh or frozen)
  • 3 cloves fresh garlic, finely chopped
  • 2 tbsp olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley or basil, chopped
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp butter (optional)

Instructions

  1. Prepare the Steak: Slice the steak thinly against the grain for tenderness. Season with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the steak slices about 2 minutes per side until browned but still juicy. Remove from skillet and set aside to keep warm.
  2. Cook the Tortellini: Boil a pot of salted water. Add tortellini and cook following package instructions, usually 3 to 5 minutes, until al dente. Drain the tortellini, reserving about 1/4 cup of pasta water.
  3. Sauté the Garlic: In the same skillet, reduce heat to medium. Add a bit more olive oil or butter, then toss in finely chopped garlic. Cook gently until fragrant and golden, about 1 to 2 minutes, taking care not to burn the garlic.
  4. Combine Tortellini and Steak: Return the drained tortellini and steak slices to the skillet with the garlic. Toss gently to coat everything evenly with the garlicky oil. Add a splash of reserved pasta water to create a light sauce and toss again so it clings to the pasta and steak.
  5. Finish with Cheese and Herbs: Remove skillet from heat. Sprinkle generously with freshly grated Parmesan cheese and chopped parsley or basil. Give the dish one last gentle toss to blend all the flavors before serving warm.

Notes

  • Let steak rest at room temperature before cooking to ensure even searing and tenderness.
  • Mince garlic finely to cook quickly and distribute flavor uniformly.
  • Use reserved pasta water to loosen sauce and help it adhere to the pasta and meat.
  • Avoid overcooking steak; remove while still slightly pink for juiciness and tenderness.
  • Add fresh herbs at the end to preserve their bright, fresh flavor.
  • This recipe can be customized with ingredients like spinach, mushrooms, or sun-dried tomatoes for extra nutrition and color.
  • For a dairy-free option, omit cheese and butter and consider nutritional yeast as a substitute.
