Ingredients

Scale

Protein

  • 2 skinless, boneless chicken breasts

Vegetables

  • 4 large carrots, peeled and cut into sticks

Marinade

  • 3 garlic cloves, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the marinade: In a large bowl, combine minced garlic, chopped fresh herbs (thyme, rosemary, parsley), olive oil, lemon juice, salt, and pepper. Whisk together until well blended. This aromatic marinade will infuse the chicken and carrots with rich, bold flavors.
  2. Marinate the chicken and carrots: Add the chicken breasts and carrot sticks to the marinade bowl. Toss to coat everything evenly. Let it sit for at least 10 minutes to soak up the fresh herb and garlic essence; if you have more time, marinate for up to 30 minutes for maximum flavor.
  3. Preheat the oven and arrange ingredients: Heat your oven to 400°F (200°C). Spread the chicken and carrots out on a baking sheet lined with parchment paper or foil. Make sure they are in a single layer for even cooking and browning.
  4. Roast until golden and tender: Place the baking sheet in the oven and roast for about 20 to 25 minutes. The chicken should reach an internal temperature of 165°F (74°C), and the carrots will be tender with caramelized edges.
  5. Rest and serve: Remove from the oven and let the chicken rest for 5 minutes to keep it juicy. Serve alongside the roasted carrots, garnished with extra fresh herbs if you like.

Notes

  • Use room temperature chicken for more even cooking and juiciness.
  • Don’t overcrowd the pan; give the chicken and carrots space to roast rather than steam.
  • Make the marinade in advance for deeper flavor; marinate up to 4 hours before cooking.
  • Pat the chicken dry before marinating to help the marinade stick and encourage browning.
  • Cut carrots into uniform sizes for consistent cooking.
