Ingredients

Base

  • Flour Tortillas – 4 large
  • Hummus or Cream Cheese – 1/2 cup

Vegetables

  • Bell Peppers (red, yellow, or orange) – 1 cup, thinly sliced
  • Cucumber – 1 medium, sliced into thin strips
  • Carrots – 1 large, grated
  • Baby Spinach or Lettuce – 1 cup
  • Avocado (optional) – 1 medium, sliced

Seasoning

  • Salt – to taste
  • Pepper – to taste

Optional Add-ins

  • Sliced turkey, chicken breast, or tofu – 1/2 cup
  • Shredded mozzarella, feta, or cheddar cheese – 1/4 cup
  • Hot sauce or finely chopped jalapeños – to taste
  • Fresh herbs (basil, cilantro, or dill) – 2 tbsp chopped

Instructions

  1. Prepare Your Veggies: Wash and dry all vegetables thoroughly. Slice bell peppers and cucumbers into thin strips, grate the carrots finely, and ensure baby spinach or lettuce leaves are clean and dry.
  2. Spread the Base: Lay each flour tortilla flat and spread a generous, even layer of hummus or cream cheese over the surface to add flavor and keep vegetables in place.
  3. Layer Your Vegetables: Evenly arrange the leafy greens first, then layer bell peppers, cucumbers, grated carrots, and avocado slices if using. Season lightly with salt and pepper.
  4. Add Optional Fillings: If desired, add protein options like sliced turkey, chicken breast, or tofu, sprinkle cheese, or add spicy elements such as hot sauce or jalapeños. Fresh herbs can also be sprinkled in this step.
  5. Roll It Up Tightly: Starting at one edge, roll each tortilla tightly but gently to keep fillings compact and prevent spillage.
  6. Slice and Serve: Use a sharp knife to slice each roll into 1 to 1.5-inch pinwheels. Arrange them on a plate or platter to showcase the colorful layers.

Notes

  • Use the freshest vegetables possible for best crunch and flavor.
  • Make sure leafy greens are dry to avoid soggy tortillas.
  • Use a sharp knife for clean, neat slices.
  • Leave a small border around the tortilla edge when layering to avoid spills.
  • Chill roll ups for 10 minutes before slicing to firm them up.
  • Store leftovers in an airtight container lined with paper towels in the fridge for up to 2 days.
  • Not recommended for freezing due to soggy vegetables after thawing.
