Ingredients

Scale

Main Ingredients

  • 1 lb ground chicken breast
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/2 teaspoon red chili flakes (adjust to taste)
  • 1 tablespoon fish sauce
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, thinly sliced
  • 1/2 cup panko breadcrumbs (use gluten-free if needed)
  • 1 large egg
  • 1 tablespoon soy sauce

Instructions

  1. Preheat the Oven and Prepare the Baking Sheet: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it to ensure the meatballs don’t stick.
  2. Mix the Meatball Ingredients: In a large bowl, combine ground chicken with minced garlic, grated ginger, chili flakes, fish sauce, lime zest and juice, chopped cilantro, green onions, panko breadcrumbs, egg, and soy sauce. Mix gently with your hands or a spoon until all ingredients are evenly incorporated.
  3. Shape the Meatballs: Using a tablespoon or your hands, form the mixture into small, evenly sized meatballs. Place them on your prepared baking sheet, leaving a little space between each meatball for even cooking.
  4. Bake Until Golden and Cooked Through: Bake the meatballs for about 18-20 minutes, turning them halfway through to ensure they brown evenly on all sides. They should be cooked through and have a delicious golden exterior.
  5. Serve with Your Favorite Sides: Remove the meatballs from the oven and serve hot with steamed jasmine rice, a crisp salad, or noodles tossed in a light sauce.

Notes

  • Don’t overmix the ingredients to keep the meatballs tender rather than dense.
  • Make meatballs uniform in size for even cooking throughout.
  • Use fresh garlic, ginger, and herbs to boost flavor.
  • Lightly brush the meatballs with oil before baking to enhance browning and crispiness.
  • Let the meatballs rest a few minutes after baking to lock in juices.
