Ingredients

Scale

Beef Mixture

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning (chili powder, cumin, paprika blend)
  • 1/4 cup water

Layers

  • 2 cups refried beans
  • 3 cups shredded cheese (combination of cheddar and Monterey Jack)
  • 1 1/2 cups tomato sauce or salsa
  • 68 taco shells or 2 cups crushed tortilla chips

Optional Toppings

  • Sour cream
  • Diced tomatoes
  • Sliced black olives
  • Chopped cilantro

Instructions

  1. Prepare the Beef Mixture: Brown the lean ground beef in a skillet over medium heat. Add diced onion and minced garlic, cooking until softened. Stir in taco seasoning and 1/4 cup water, then simmer until thick and fragrant.
  2. Layer the Taco Shells or Chips: Grease a baking dish and spread a layer of crushed taco shells or tortilla chips evenly to form a crunchy base.
  3. Add Refried Beans and Beef: Spread a layer of refried beans over the crushed shells, then add a generous layer of the seasoned beef mixture.
  4. Spread Cheese and Sauce: Sprinkle shredded cheese over the beef, then spoon tomato sauce or salsa evenly to add moisture and tang.
  5. Repeat Layers and Bake: Continue layering the taco shells, refried beans, beef, cheese, and sauce until the dish is full. Finish with a thick layer of shredded cheese on top. Bake in a preheated oven at 375°F (190°C) for about 25 minutes, until bubbly and golden on the edges.

Notes

  • Choose lean ground beef to reduce grease and keep the dish lighter.
  • Do not over-soak taco shells; keep them slightly crunchy for texture contrast.
  • Grate fresh cheese for better melting and richer flavor compared to pre-shredded cheese.
  • Prepare the beef mixture a day ahead to save time on busy nights.
  • Allow lasagna to rest a few minutes after baking for cleaner slices and better flavor melding.
