Sushi Rice

  • 2 cups short-grain sushi rice
  • 2 1/2 cups water
  • 3 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt

Seafood Mixture

  • 8 oz canned or fresh crab meat
  • 1/2 cup mayonnaise
  • 12 teaspoons sriracha or chili sauce (adjust to taste)

Topping and Garnishes

  • 1 cup shredded cheese (cheddar, mozzarella, or pepper jack)
  • Nori sheets or seaweed flakes, for serving
  • Soy sauce or tamari, for serving
  • Optional garnishes: thinly sliced green onions, sesame seeds

Instructions

  1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions using 2 1/2 cups of water. Once cooked, gently fold in rice vinegar, sugar, and salt while the rice is still warm to season it with the classic sushi flavor.
  2. Make the Seafood Mixture: In a medium bowl, combine the crab meat with mayonnaise and drizzle in sriracha or chili sauce. Mix gently until well combined, creating a creamy and slightly spicy seafood filling.
  3. Assemble the Sushi Bake: Spread the seasoned sushi rice evenly into the bottom of a baking dish (around 8×8 inches). Layer the crab mixture evenly over the rice. Sprinkle the shredded cheese generously on top to cover the surface.
  4. Bake Until Golden: Preheat your oven to 375°F (190°C). Place the assembled baking dish inside and bake for 15 to 20 minutes or until the cheese is melted, bubbly, and golden brown on top.
  5. Serve with Nori and Soy Sauce: Remove the sushi bake from the oven and let it cool slightly for a few minutes to set. Cut into pieces and serve warm with crispy nori sheets or seaweed flakes and soy sauce or tamari on the side for dipping.
