Instructions

  2. Whisk the Egg Mixture: In a large bowl, crack the eggs and whisk them thoroughly until combined. Then stir in the cottage cheese, shredded cheese if using, salt, pepper, and any herbs or spices to form a smooth mixture.
  3. Add Vegetables or Other Add-ins: Fold in finely chopped vegetables or meats as desired. Distribute the mixture evenly into the muffin cups, filling each about three-quarters full to allow room for rising.
  4. Bake Until Set: Place the muffin tin in the oven and bake for 20-25 minutes until the egg bites are puffed, lightly golden, and firm to the touch. A toothpick inserted into the center should come out clean.
