Ingredients

Scale

Base Ingredients

  • 4 large eggs
  • Pinch of salt
  • Pinch of black pepper
  • 1 teaspoon Italian seasoning

Cheese and Sauce

  • 1/2 cup shredded mozzarella cheese
  • 1/3 cup tomato sauce
  • 2 tablespoons grated Parmesan cheese

Toppings (Customize as desired)

  • Mushrooms, sliced
  • Bell peppers, chopped
  • Pepperoni slices
  • Olives, sliced
  • Other vegetables or cooked meats like sausage, bacon bits, or shredded chicken

Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Lightly grease a small to medium oven-safe baking dish or skillet to prevent sticking and ensure easy removal after baking.
  2. Mix the Base: In a medium bowl, whisk together the eggs, salt, pepper, and Italian seasoning until the mixture is smooth and fully combined. This mixture acts as the crustless base that holds all the toppings together.
  3. Layer the Ingredients: Pour half of the egg mixture into the prepared baking dish, spreading it evenly. Spoon dollops of tomato sauce across the egg layer, then sprinkle with shredded mozzarella. Add your choice of toppings evenly on top of the cheese. Finally, pour the remaining egg mixture over the toppings to encase them.
  4. Bake to Perfection: Place the dish in the oven and bake for 20-25 minutes, or until the egg base is set and edges turn golden. In the last 5 minutes, sprinkle Parmesan cheese on top to achieve a slightly crispy and flavorful crustless finish.
  5. Cool and Serve: Remove the crustless pizza from the oven and let it cool for 5 minutes before slicing. This resting period helps the layers set, making clean slices easier to serve.

Notes

  • Use fresh eggs for better texture and stability.
  • Do not overload toppings to avoid sogginess; balance is key.
  • Choose low-moisture cheese to prevent excess wetness.
  • Pre-cook any meat toppings to ensure they are fully cooked.
  • Let the pizza rest before slicing for firmer, neater servings.
