Ingredients

Scale

Protein

  • 1.5 to 2 lbs boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

Liquids & Base

  • 1 can (13.5 oz) full-fat coconut milk
  • 3 cups chicken broth
  • 12 tbsp fish sauce
  • 12 tbsp lime juice (freshly squeezed)

Flavoring & Spices

  • 2 tbsp red curry paste
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced

Vegetables

  • 1 cup bell peppers, sliced (red or yellow preferred)
  • 1 cup mushrooms, sliced

Garnishes

  • Fresh cilantro, chopped
  • Fresh Thai basil, chopped
  • Optional: thinly sliced red chili, chopped peanuts, lime wedges

Instructions

  1. Prepare your ingredients: Chop the vegetables and mince the garlic and ginger. Cut the chicken into bite-sized pieces to ensure even cooking and better flavor absorption.
  2. Combine ingredients in the crockpot: Add the chicken, red curry paste, garlic, ginger, chicken broth, and coconut milk to the crockpot. Stir well to evenly distribute the curry paste throughout the liquid.
  3. Cook low and slow: Set the crockpot to low and cook for 4 to 6 hours. This slow cooking allows flavors to develop deeply while keeping the chicken tender and juicy.
  4. Add vegetables near the end: About 30 minutes before serving, add the bell peppers and mushrooms so they retain some firmness and freshness instead of becoming mushy.
  5. Finish with fresh herbs and lime: Just before serving, stir in the lime juice and sprinkle chopped cilantro and basil on top for fresh aroma and bright flavor.

Notes

  • Use full-fat coconut milk for richer texture and balanced spiciness.
  • Adjust spice by starting with less red curry paste and adding more after tasting.
  • Add fresh herbs just before serving to preserve their vibrant flavor and color.
  • Boneless chicken thighs stay more tender than breasts in slow cooking.
  • Don’t skip the lime juice—it’s key for harmonizing the flavors.
